First of all, Happy Easter everyone! I've been getting into baking quiet a bit recently and after making my Banana and chocolate chip bread for weeks and weeks, my little brother came to me and asked if I'd try to make a chocolate cake as its the only cake he'll eat and I thought why not?! And what a better time than Easter too give it a go, so I searched the for a chocolate cake recipe and came across Mary Berry's but decided to add my own little twist.

You will need:
- 3 large eggs
- 175g self-raising flour
- 175g caster sugar
- 175g softened butter
- 1 1/2 tsp baking powder
- 40g (I used 50g) cocoa powder
- 4 tbsp boiling water
- chocolate icing
- nutella
-11/2 cadburys mini eggs

So start off by preheating the oven to 180 degrees and line your cake tins with some butter, then beat the eggs, self-raising flour, caster sugar, butter and baking sugar together until smooth in a large mixing bowl. Next put the cocoa powder in a separate mixing bowl and add a little water at a time to create a paste. Add this to the mixture and stir all together to create a rich chocolate mix.

Once this is down cut the cadbury mini eggs in half making sure you leave about 5 - 6 for decoration on top. Add these to the cake mixture and gently fold into it and then empty evenly into your cake tins and level on top. Bake for about 25 - 30 minutes or until the cake appears to be shrinking away from the sides and is springy to the touch.
Leave the cake to cool for around 30 minutes then grab your Nutella and start generously spreading a thick layer onto one side of the cake base and place the other layer on top of that. With this step I slightly cheated and used Dr. Oetker chocolate cupcake icing and decorated the top and sides of my cake trying to make it look fancy.
Lastly I popped a few of the leftover cadburys mini eggs in the centre and sprinkled a few white chocolate drops over the top and used a bit of white chocolate icing around the edges to add a little more decoration, yes I know I got carried away but it was for my brother, so you can do as little as much as you want when it comes to the decoration part. Enjoy!
